Lemon Pepper Salmon

Ingredients

  • For the salmon:
  • 4
    5 oz salmon steaks
  • 1
    tbsp olive oil
  • 1
    large lemon (cut into slices)
  • 2
    cloves garlic (crushed)
  • 2
    sprigs fresh rosemary (chopped)
  • Kosher salt (to taste)
  • Pepper (to taste)
  • For the couscous:
  • 1
    cup couscous
  • 1 ½
    cups water
  • ½
    tsp salt

Step 1

Make the couscous: add couscous in a microwave safe medium deep dish. Add water and salt. Stir and spread couscous in even layer.

Step 2

Cover the couscous with Duo Cover and cook for 2 minutes at Power Level 10. If you find your couscous firm, microwave for another minute. Fluff the couscous with fork.

Step 3

Make the salmon: cut the lemon into slices and arrange in a deep microwave-safe dish. Top with garlic and add salmon.

Step 4

Brush the salmon with olive oil and season to taste with salt and pepper.

Step 5

Cover the salmon with Duo Cover and cook for 6 minutes at Power Level 10.

Step 6

Carefully remove Duo Cover and the salmon from the microwave. Check the salmon with a meat thermometer — salmon needs to be between 135ºF - 145ºF (for medium to well-done).

Step 7

Using a spatula, lift the salmon and transfer on to a plate. Top with extra lemon slices and fresh rosemary. Serve couscous on the side.
