Cinnamon Roll Cake

Ingredients

    cup all-purpose flour*
  • 1
    tsp baking powder
  • ½
    cup milk*
  • 4
    tbsp maple syrup
  • ½
    tsp vanilla extract
  • For the topping:
  • 4
    tbsp coconut sugar
  • 2
    tsp cinnamon
  • For the icing:
  • ½
    cup powdered sugar
  • 3
    tbsp milk*

Step 1

Grease a microwave safe pie dish (4-cup capacity) with cooking spray.

Step 2

In a separate mixing bowl, whisk together flour, baking powder, almond milk, maple syrup, and vanilla extract.

Step 3

In a separate small dish, whisk together coconut sugar and cinnamon.

Step 4

Pour the wet ingredients into the greased pie dish and then sprinkle the topping mixture on top. Then use the tip of a knife to swirl cinnamon mix into the top of the batter.

Step 5

Cover the cake with Duo Cover. Cook on Power Level 9 for 2 minutes.

Step 6

Remove Duo Cover and cook for another 4 minutes.

Step 7

Remove from microwave and let the cake stand for 5 minutes. While cooling, make the icing; whisk the powdered sugar with the almond milk.

Step 8

Drizzle the icing over the cake. Slice the cake and serve.

Gluten-free option: use either almond flour or GF all-purpose flour.

Vegan option: use almond or other plant-based milk.
