cups cooked Jasmine rice*

Step 1
Make the curry: combine bay leaves, curry powder, paprika and cumin in a small dish.
Step 2
In a microwave safe large deep dish (6-cup capacity) combine vegetable oil, tomato puree, onion, garlic, chicken, and ginger. Cover with Duo Cover and microwave for 1 minute at Power Level 10 or until fragrant.
Step 3
Remove Duo Cover. Add spice mixture from step #1 into the large deep dish and stir thoroughly.
Step 4
Cover with Duo Cover and microwave for 5 minutes. Stop the microwave for 30 seconds and microwave again for another 5 minutes.
Step 5
Let the curry rest underneath Duo Cover for 5 minutes. Check the chicken with a meat thermometer — it should be 165ºF, otherwise cook for another 30 seconds.
Step 6
Remove Duo Cover and serve curry with rice.

A meat thermometer is needed for this recipe — chicken needs to be 165ºF.
Jasmine Rice Cooking Instructions: In a large dish, combine 2 cups rice with 3 cups water. Cover the rice with Duo Cover. Cook the rice for 5 minutes on Power Level 10. Reduce to Power Level 7 and cook for 10 minutes. Let the rice stand for 5 minutes under Duo Cover. Fluff the rice with a fork.
