Ingredients

  • 1
    cup Arborio rice
  • 1 ½
    cups water
  • ¾
    tbsp olive oil
  • 1.5
    tsp salt
  • 6
    oz. peas (fresh or frozen)
  • 3
    tbsp butter
  • 1
    oz. freshly grated parmesan cheese

Step 1 - Add olive oil

Place olive oil in deep large dish.

Step 2 - Add rice

Add rice and stir to combine.

Step 3 - Cover with Duo Cover

Cover with Duo Cover and microwave on HIGH for 1 minute.

Step 4 - Add half of the water

Stir in ½ of the water.

Step 5 - Cover the rice

Cover the rice with Duo Cover and microwave on Power Level 4 for 10 minutes.

Step 6 - Remove the rice

Remove the rice from the microwave. Remove the Duo Cover and give it a good stir.

Step 7 - Add remaining water

Add remaining water and cover with the Duo Cover again.

Step 8 - Microwave rice

Microwave the rice, Power Level 4 for 10 minutes.

Step 9 - Remove the rice again

Remove the rice from the microwave. Remove the Duo Cover and add peas and butter.

Step 10 - Cover the rice again

Cover the rice again and microwave for 2 minutes.

Step 11 - Stir in parmesan

Remove the risotto from the microwave and stir in parmesan.

Step 12 - Serve!

Serve risotto warm, garnished with watercress, chopped parsley, and more parmesan on top.

Guidelines & Tips

Instead of water you can use cold vegetable stock — it will enhance the flavor of the risotto.

Use a wide cooking dish for the risotto. It will allow the rice grains to cook evenly.
