Ingredients

  • 1
    cup Arborio rice
  • 1 ½
    cups water
  • ¾
    tbsp olive oil
  • 1.5
    tsp salt
  • 6
    oz. peas (fresh or frozen)
  • 3
    tbsp butter
  • 1
    oz. freshly grated parmesan cheese

Garnishes

  • Watercress
  • Chopped parsley
  • More parmesan

Step 1

Place olive oil in a microwave safe large deep dish (6-cup capacity).

Step 2

Add rice and stir to combine.

Step 3

Cover with Duo Cover and microwave for 1 minute at Power Level 10.

Step 4

Stir in ½ of the water.

Step 5

Cover the rice with Duo Cover and microwave for 10 minutes at Power Level 4.

Step 6

Remove both Duo Cover and the rice from the microwave and give it a good stir.

Step 7

Add remaining water and cover with Duo Cover again.

Step 8

Microwave the rice again for 10 minutes at Power Level 4.

Step 9

Remove the rice from the microwave and add peas and butter.

Step 10

Cover the rice again and microwave for 2 minutes at Power Level 4.

Step 11

Remove the risotto from the microwave and stir in parmesan.

Step 12

Serve risotto warm, garnished with watercress, chopped parsley, and more parmesan on top.

Guidelines & Tips

Instead of water you can use cold vegetable stock — it will enhance the flavor of the risotto.

Use a wide cooking dish for the risotto. It will allow the rice grains to cook evenly.
