Rinse potatoes well and prick them with a fork. Place them in a microwave safe bowl.

Remove the lamb from the microwave, remove the cover carefully, and check for the doneness. The perfectly cooked lamb needs to reach 150-160F (for medium and well done, 145F is rare doneness). Sprinkle the lamb with chopped rosemary. I do not recommend using fresh rosemary in the microwave because it can go bitter. You can use dried one instead.
Cut wooden ends from your asparagus. Wash spears with cold water and do not pat dry. Toss the asparagus with remaining olive oil and season with salt in a large shallow dish. Cover the asparagus with Duo Cover.
Cook the asparagus for desired amount of time, at desired power level. Check below for instructions*
Sprinkle the asparagus with lemon zest.
To assemble; serve lamb shanks with baby potatoes and asparagus on side.
